The Midleton Very Rare Dair Ghaelach (or “Irish oak”) collection is the result of a six-year exploration into using native oak to age Irish whiskey.

Led by then-Master Distiller Kevin O’Gorman, the two goals for the project were to source Irish oak in a sustainable way that was viable in the long-term, and to craft a new and outstanding style of single pot still Irish whiskey.

This collection is matured in barrels made from Irish oak from forests across the country. The oak selected for each release imbues the spirit with the true flavor of Ireland.

Midleton Very Rare Dair Ghaelach is non-chill filtered – it is not subjected to chill filtration to retain more of its natural flavors and character. It’s bottled at cask strength and with its natural color.
